***THE PERFECT "ICE TEA"***
History:
Like many great inventions, iced tea was created completely by accident by Richard Blechnden at the 1905 World’s Fair in St Louis, MO. It was a sweltering day and Mr Blechnden’s tea concession was not doing well. With quick thinking, he added ice and created an American favorite. Most teas you enjoy hot could be poured over ice for a refreshing change.
Brewing:
Use 1 oz tea to 64 oz water.
Standard coffee maker: Run 1(one) cycle through leaves. Pour hot infused tea into 64 oz of cold water and place in dispenser. Another option would be run 2(two) cycles through the same leaves and cool before placing in dispenser.
Traditional method: Do not bring water to full boil. Should clouding occur immediately after brewing, lower brewing temperature of water.
Storage/Serving:
Brew fresh each day, don’t store overnight and add plenty of ice when serving. Any item previously used for brewing or storing coffee will contaminate tea.
Clouding:
Clouding is the upset of the pH or chemical balance in your glass. It can be as simple as a type of tea with a high acid content, which will raise the pH in cool water. However, a major factor in clarity can be local water since your brewed iced tea is 99% water. The mineral content, chlorine and water hardness affects both taste and clarity of brewed tea.
***"ICED COFFEE" MADE SIMPLE***
Use the usual amount of coffee with ½(half) normal amount of water. Fill the carafe with ice and brew as usual. Pour over ice, add Torani or Monin syrups if desired and enjoy. To insure the best taste, make your iced coffee daily.
